Extra Virgin Olive Oil (AOVE)

The main objective of the project is to study the relationship between the content of phenolic compounds and the in vitro neuroprotective activity of Extra Virgin Olive Oils (AOVEs) from the province of Granada, in order to establish the characteristics of oils that exhibit greater potential benefits against neurodegenerative diseases such as Alzheimer's. For this purpose, samples of AOVEs from the two Protected Designations of Origin (PDOs): Poniente de Granada and Montes de Granada, will be analyzed.

INNOVATIVE TECHNOLOGIES UTILIZED:

  • Quantify the main neuroprotective phenolic compounds present in different varieties of Extra Virgin Olive Oils (EVOOs).
  • Determine the in vitro neuroprotective potential of the extracts and main phenolic compounds of EVOOs by evaluating their cholinergic and anti-inflammatory effects as inhibitors of acetylcholinesterase (AChE) and cyclooxygenase-2 (COX2) activity, respectively.
  • Investigate the relationship between phenolic compounds and the neuroprotective activity of the studied EVOOs. Identify the oils with the highest neuroprotective potential associated with phenolic compound content.
  • Determine the similarities and differences among the studied EVOOs based on genetic, geographical, and agronomic conditions.
