The Cherry4Food project, a commitment to circular bioeconomy, achieves great media impact

From the CIDAF Technology Center, as the technical coordinators of the Cherry4Food project, we are pleased to share with you the remarkable media impact this innovative project has achieved. We are delighted to see how much interest our initiative has generated, as it reflects the growing focus on sustainable and innovative solutions within the food sector. 🌍💡

What is Cherry4Food?

Cherry4Food is a project in the field of circular bioeconomy, with the primary goal of valorizing by-products generated during the production of salmorejos and gazpachos. These by-products, mainly composed of tomato skins and seeds, are rich in nutritional and bioactive compounds. We are transforming them into functional powdered ingredients 🌱, which can be used for both ruminant feed and the development of healthy and innovative food products for human consumption. 🍅

What makes this project particularly interesting is its sustainability approach. During the production of salmorejos and gazpachos, no thermal treatments are applied. Instead, we use high hydrostatic pressure (HHP) technology to ensure food safety while preserving the bioactive properties of the by-products. 🔬

Over the past few months, we have witnessed excellent media coverage of the Cherry4Food project. Leading media outlets specializing in bioeconomy, sustainability, and technological innovation have highlighted our work, particularly our use of advanced technologies such as infrared stove drying. This energy-efficient drying technology ensures a more effective drying process, preserving bioactive compounds and allowing us to obtain high-quality ingredients. 💡⚡

At CIDAF, as a technology center specializing in functional ingredients, we have been responsible for developing ingredient prototypes that we have obtained and evaluated throughout the project. Additionally, we have carried out the scaling-up of production, processing more than 1,000 kg of gazpacho by-products in our pilot plant. This phase has been crucial, and its success has been widely recognized by the media closely following innovations in the food industry. 🔝

A Step Towards a Healthy and Sustainable Future

Cherry4Food not only has a positive impact on the sustainability of the agricultural sector, but it also promotes the creation of healthy food products. The ingredients obtained are enriched with carotenoids, phenolic compounds, and vitamins, enhancing the quality of the final products.
