PROJECT OVERVIEW
Valorization of almond by-products
The main objective of the project is to valorize the by-products obtained from almond processing in the almond industry, and their potential use as a source of bioactive compounds with various applications, primarily antioxidant and antimicrobial, as well as a technological ingredient or with nutritional benefits in the agri-food industry.
The results obtained from the project have beneficial effects for farmers (better waste management, increased economic profitability, and job creation through the development of small businesses), as well as for the livestock and animal nutrition sectors (improved economic profitability, increased production, and reduced incidence of diseases on farms), or the pharmaceutical, food, cosmetic, and nutraceutical sectors (obtaining sources rich in bioactive compounds for the production of pharmaceuticals, cosmetics, functional foods, and nutraceuticals).

TECHNOLOGIES USED:
- Obtaining high-value natural extracts from almond by-products using ‘green’ technologies (microwave-assisted extraction – MAE) and conventional methods (solid-liquid extraction – SLE).
- Detailed characterization of the phenolic profile of the by-products and extracts using high-resolution chromatographic techniques (HPLC-MS).
- In vitro evaluation of the antioxidant and antimicrobial activity present in these almond by-products.
- Assessment of the technological properties of these by-products or extracts obtained as a food ingredient.
