PROJECT OVERVIEW
Valorization and Promotion of Raisin Consumption through the Study of its Bioactive Compounds Content in Fruits and Co-products and Evaluation of its Neuroprotective Activity in Humans.
The main objective of the project is to enhance the value of raisins as a food product and promote their consumption among the general population, especially those susceptible to various pathologies, due to their potential neuroprotective activity attributed to their bioactive compound content.
This objective will be achieved by employing environmentally friendly extraction technologies and Green solvents, which will enable efficient recovery of bioactive compounds present in raisins.
The neuroprotective activity of the evaluated extracts will be determined initially through in vitro bioactivity assays to screen those with the highest bioactivity, facilitating their selection for subsequent evaluation in human intervention trials.
